The Piedmont’s Finest Black Truffle, also known as “Tuber Melanosporum Vittadini” or “Black Winter Truffle,” is probably the most well-known truffle in international cuisine.

The Piedmont’s Finest Black Truffle has a globular shape with a brown-black rind and reddish-black flesh, punctuated by thin, light-colored, and very branched veins. The Finest Black Truffle is considered the most prized of the various black truffle varieties and has an exquisite flavor that is most evident after cooking. In Piedmont, the harvest takes place from December 15th to March 15th.

RECOMMENDED USE
The Piedmontese Black Truffle is also excellent raw, but is usually consumed after a short cooking time. It can be used as an ingredient in game, roasts, beef fillets, escalopes, poultry with truffles (see image “Capon stuffed with Black Truffle”), pasta dishes, and even pizza.
