The Black Autumn Truffle (Tuber Uncinatum) of Piedmont is a truffle that is particularly widespread in Piedmont. It is mainly harvested in the Langhe, Roero and Monferrato areas. The flesh is hazelnut-coloured with numerous white veins running through it and has a mushroom-like aroma with a very delicate flavour. In Piedmont, the black autumn truffle harvest takes place from 1 October to 30 November.
RECOMMENDED USE
After brief cooking, black autumn truffles can be used as an ingredient in fillings and sauces, risottos or sliced thinly on salads.
