Summer black truffle
The Black Summer Truffle of Piedmont also called “Tuber Aestivum Vittadini” or “Scorzone” is a truffle particularly common in Piedmont.
The Piedmont Black Summer Truffle is a truffle that is particularly widespread in Piedmont. It is mainly harvested in the Langhe, Roero and Monferrato areas and is commonly called Scorzone because of its hard, rough, black-brown skin, rich in large, protruding, pyramid-shaped warts. The flesh is hazelnut-coloured and crossed by numerous white veins. It has a mushroom-like aroma and a very delicate flavour. In Piedmont, the Black Summer Truffle is harvested from 1 June to 31 August.

Black Summer Truffle of Piedmont, after a short cooking, can be used as an ingredient in fillings and sauces or sliced thin slices on summer salads.
